Chemex Brew Guide

Step 1: Place the Chemex Filter in the brewer with single fold away from the spout and multiple folds lined up against the spout. Rinse the filter with hot water to get an even seal all the way around. This preheats the brewer and gets rid of any paper flavor from the filter. Dump the rinse water. 

Step 2: Add 42g Medium/ Coarse ground coffee. Center the coffee in your brewer and zero out the scale. 

Step 3: Start the timer when you add the hot water. Pour until all the grounds are saturated or until you reach about 100g. 

Step 4: At 30 seconds, start the second pour. Pour water in a circular motion from the outside of the filter to the center to reintegrate the coffee and water and ensure even extraction. Pour over the dark spots and avoid the light ones. By 1 minute the brewer should have around 350g of water. 

Step 5: Continue pouring water from the outside to the center, keeping the water level around the same height. By 3 minutes you should be at your end goal of 680g. 

Step 6: At 4 minutes you should be pretty close to volume. Remove the filter and let it drain into the sink. 

Step 7: Swirl the Chemex around and enjoy!
