Since your coffee is freshly roasted, this prevents it from sitting needlessly in the post office or delivery vehicle over the weekend. Polaris is known as the brightest star in the sky and with its's distinctively clean articulated notes this coffee really shines. This microlot from Yader and Karen is named the "perfectionist microlot" because they are so meticulous with their harvesting and processing and it really shows. One of the most notable attributes of this coffee is dos distinct, articulated, and clean each note is despite dealing in a weightier flavor realm. As I cupped this coffee I couldn't help but see the parallels between its flavor notes and a well planned holiday desert.
