We first met Ivanov and Angela during and event in 2018 and from the moment we met them their passion for sustainable hight quality coffee radiated from them. Their family based Tio Conejo Farm is in pursuit of sustainability in all directions from full benefits for farming partners to water conservation and reforesting to transparent trading models. Their dedication especially applies to their coffees where they tediously dedicate themselves to each stage of the process. They harvest 80% ripe to 20% over-ripe cherries that are pre-fermented for 12 hours before being pulped and fermented for 72 hrs before being dried on raised beds until it reaches 10.5% humidity. All this hard work and attention do detail pays off brilliantly in an incredibly sweet and complex cup that especially shines as a single origin espresso. We are thrilled for this relationship and the amazing coffee that has come from it!
Please note: to ensure your coffee arrives as fresh as possible coffees are roasted to order. Coffee is roasted Tuesday, packaged Wednesday, and shipped on Thursday. Orders will be filled as quickly as possible depending on availability but please note that order arriving after Monday may be filled the following week.
